What is a microcreamery?

A microcreamery is a small-scale creamery that focuses on producing high-quality, handcrafted ice cream in limited quantities. This artisanal approach allows us to pay close attention to detail and create unique, super-premium flavors that stand out from mass-produced options. Think microbrewery for beer but for ice cream. There are specific qualifications you have to meet to be a microcreamery. 

Small batch. Producers make the ice cream in small batches in a small batch freezer, which makes a finite amount of ice cream. Large manufacturers use industrial-sized continuous freezers, which can make an infinite amount of ice cream at one time. 

Handmade. Everything we put in the ice cream, cookies, cakes and candy is made from scratch in our in-house bakery unless we collaborate with a partner. 

All-natural dairy. Our proprietary sweet cream dairy base uses all-natural ingredients and milk from grass-grazed cows who live only 300 miles away. 

At least 16% butterfat. Our 16-18% butterfat provides our ice cream with rich flavor, smooth texture and beautiful melting properties. It also adds the shininess that makes ice cream look appealing. Butterfat coats your tongue and allows the flavor to linger even after swallowing the ice cream.  

Less than 30% overrun. A microcreamery must pump less than 30% air into the ice cream. Overrun is the amount of air churned into the ice cream.  The pints you see on grocery store shelves are typically 100-120% overrun.
